Chef Tony's culinary journey began in Kingston, Jamaica, where he studied culinary arts and cultivated his expertise over 29 years, working in various hotels and restaurants across the island, including a famous Chinese restaurant where he developed a penchant for this culinary style. In 1998, Chef Tony embarked on his entrepreneurial venture, opening his first restaurant in Ocho Rios, Jamaica. There, he delighted locals, tourists, and cruise line workers alike with traditional Jamaican seafood dishes.

In 2009, Chef Tony relocated to Baltimore, where he continued to refine his craft, working in restaurants across the city. Eventually, he opened a highly regarded establishment in East Baltimore, although it has since closed its doors. It was in 2011 that Chef Tony crossed paths with Sophia, and the pair quickly realized they shared a mutual entrepreneurial spirit, along with complementary interests and skill sets perfectly suited for operating a restaurant together. And thus, the seeds of their culinary partnership were sown, paving the way for their successful venture.
